Fermentation: long timed steeping of peels at a controlled temperature.
Temperature: between 25° and 28°.
Ageing: Twelve months in tonneaux and two months in bottles.

Total acidity: 5,6 gm/l
Total SO2: 80 ppm
Color: intense ruby red with brown reflexes.
Scent: characterised by a typical wine cannonau scent.
Taste: wide, fresh and velvet taste.
